Pickled Cucumber

Makes approx. 2 cups

Ingredients

  • 1 cucumber •
  • 1 tsp salt •
  • 1 tsp red chile, seeded, finely chopped •
  • 1 tbsp fresh ginger, peeled and finely chopped •
  • ½ cup apple cider vinegar •
  • 1 tbsp raw honey

Directions

Slice the cucumber into strips along its length, making ribbons.
Combine all the ingredients in a large bowl.

Stir well, cover, and refrigerate for 30 minutes and 2 hours, while it pickles.
Transfer to a glass jar and store in the fridge for up to 2 months.
