Salsa Verde
Makes approx. 1 cup
Ingredients
- 1 3/4 cups cilantro
- 1 cup cashews
- 4 tbsp lime juice
- one garlic clove, crushed
- 1/3 cup (2½fl oz) water
- ¼ tsp salt
- 1 tbsp olive oil
Directions
Place the ingredients (except the oil) in a blender. Blend until combined.
With the motor running, drizzle the oil in until smooth. Store in an airtight container in the fridge for one week.
