Makes approx. 1 1/2 cups

Ingredients

• 3/4 cup beets, coarsely chopped
• ½ tbsp olive oil

Directions

Place the beets in a roasting pan and drizzle with ½ tbsp of oil.

Roast for 30 minutes until soft.
