Truffle And Brie Mashed Potato
Serves 2
INGREDIENTS
- 200g potatoes
- 20 ml milk
- 20ml double cream
- 1 tbsp butter
- 1tsp truffle oil
- 60g brie
- black truffle to grate
DIRECTIONS
Bring a pan of cold water to a boil with the peeled potatoes
Simmer for 15-20 minutes until tender when pierced with a knife
Put the cooked potato through a ricer or a mouli with butter after draining
Meanwhile, heat milk and cream in a pan and add the mashed potatoes.
After adding the salt, fold in the brie and truffle oil
Fresh black truffles shaved or grated on top to taste
