Homemade PERi-PERi Sauce
PERi-PERi sauce is a perfect blend of fresh ingredients, including bird's eye chili peppers, herbs, and spices. Ingredients:
- 10-12 fresh bird's eye chili peppers
- 1 red bell pepper, seeded and roughly chopped
- 1/2 cup fresh cilantro (coriander), chopped
- 1/2 cup fresh parsley, chopped
- 4 cloves garlic, peeled and minced
- 1/2 medium onion, chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- Juice of 1 lemon
- 2 teaspoons smoked paprika
- 1 teaspoon oregano
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon sugar (optional)
Instructions:
Prepare the chili peppers by removing the stems and seeds, then roughly chop.
- Combine all ingredients in a food processor or blender and blend until smooth.
- Taste and adjust seasoning according to your preference.
- Transfer the sauce to a clean glass jar or airtight container and refrigerate for at least 2 hours.
